tastiest wheat breads out there, but it is also one of the easiest to
make. Very little kneading is involved and it only has to rise once. The

recipe calls for:
4 1/3 Cups Flour
1 3/4 Cups Water (heated to around 115F)
2 Packages Active Dry Yeast
2 Tablespoons Molasses
1/4 Cups Corn Oil
1 1/2 Teaspoons Salt
1/3 Cup Wheat Germ |

For this
recipe you will need:
3 Bowls (one mettle)
Bread Board
A 5 by 9 Inch Greased Bread Pan (use vegetable fat, Crisco, to
grease the pan)
Plastic Wrap (not a towel)
Sturdy Mettle Spoon

Wheat Flour |
First Step: Preparing Wheat Flour
(Heating the flour is the secret to this recipe. It
causes the yeast to rise and create a grand loaf. Your bread will be a
flop if you skip this step.)
In a heat
resistant mettle bowl, or extra bread pan, heat all 4 1/3 cups of flour
to around 150F in your oven. If your oven cannot bake a dish at
150, go ahead and heat the flour at the oven's lowest setting and then
let the flour cool down to just under 150F. If the flour is too hot, it
will kill the yeast and that is no good! This should take about 10
minutes. |

Yeast and Molasses |
Second Step: Preparing Yeast and Molasses
While the wheat flour
is in the oven combined:
3/4 Cups Warm Water (heated to around 115F)
2 Packages Active Dry Yeast
2 Tablespoons Molasses
Stir this
mixture until the yeast is dissolved and then let it rise for 15 minutes
in a warm place. If the yeast has reacted well with the molasses it
should resemble the lower left picture. |

Wheat Mixture |
Third Step: Mixing Wheat Bread
Add to the
yeast and molasses mixture and stir together:
1/3 Cup Wheat Germ
1/4 Cup Corn Oil
1 1/2 Teaspoon Salt
Remaining Warm Water |

Fourth Step: Adding Wheat Flour
Gradually
stir in the 4 1/3 cups of heated flour. Your dough is ready once all the
flour is thoroughly mixed in and the dough begins to pull away from the
sides of the bowl. |

Wheat Bread Rising |
Fifth Step: Kneading and Letting Wheat
Bread Rise
Dump the
dough out onto a lightly floured bread board. Then form the bread into a
loaf. Don't knead the dough more than needed, just form it into an oval.
Then place
the loaf of wheat bread into the bread pan and cover it with plastic
wrap.
Let this
sit in a warm place for 45 minutes, or until the bread rises 1 1/2 to 2
inches above the lip of the bread pan. |

Wheat Bread Cooling |
Sixth Step: Baking and Cooling Wheat
Bread
Preheat the
oven to 350F (325 for a glass pan). Then place the wheat bread on
the middle oven wrack and let it bake for 30-35 minutes. Your
bread is done baking when it has a hard, golden brown crust.
Once you
take the wheat bread out of the oven immediately remove it from the
bread pan and place it on a cooling wrack. |
