The lemon icing is what gives the outside of this carrot cake a sweet punch of zing. It compliments all the other ingredients and makes the pineapple flavor stand out.

Grated Lemon

Lemon Icing Ingredients

1 Cup Powdered Sugar

2 Lemons

Lemon Zest

First Step: Lemon Zest

First take your two lemons and grate 1 teaspoon lemon peel.

Squeezing Lemons

Second Step: Lemon Juice

Then juice the two lemons that you just finished grating.

Icing Carrot Cake

Third Step: Icing Carrot Cake

Now mix together:

1 teaspoon lemon zest

Juice of the Two Lemons

2 Cups powdered sugar 

Then take the icing and drizzle it over your carrot cake.
