Roasted Coconut

Roasted Coconut is simply coconut that has been in the microwave for a few minutes. You will want to watch it carefully and stir it every 20 seconds to prevent it from burning. You will know it's done when most of the coconut is a light brown color. Once it cools it should be crunchy.

It is one of my favorite toppings for any type of ice cream. Another thing that will add color to your ice cream is a sprig of mint. It will make your ice cream look refreshing and up its class.
