This
recipe calls for:
2 Tablespoons Olive Oil
1 Onion
2 Stalks Celery
2 Leeks
1 Carrot
1 Turnip
1 Red Potato
1 16oz. Can of Diced Tomatoes
3 Scallion Onions
1 Teaspoon Thyme (dried)
1 Teaspoon Marjoram Leaves (dried)
1 Teaspoon Salt
8 Cups Chicken Broth (unsalted)
2 Cups Fresh Green Beans
1 Zucchini Squash
1 Yellow Squash |

For this recipe you will need:
Soup Pan With Lid
Sharp Chopping Knife
Carrot Peeler
Cutting Board

Soup Ladle

Onion and Celery |
First Step: Onion and Celery
Before you start make sure all the vegetables are thoroughly
washed.
Chop your onion and celery into bite size pieces and place them
in the pan.

Adding Olive Oil and Leeks |
Second Step: Adding Leeks and Olive
Oil
First cut the dark green end of the leeks off. Cut the 2 leeks and separate each of
their rings as shown in the picture to the left. Then place them in the
pan. After this add 2 Tablespoons of olive oil. Set the pan on the
burner at low heat and stir occasionally
until the vegetables have been
thoroughly sautéed. |

Carrot, Leek, and Potato |
Third Step: Chopping More Ingredients
Peel the carrot and turnip, then cut them along with the potato into chunks. |

Adding Tomato, Carrot, Turnip, and Potato

Forth Step: Adding More Vegetables
Combine can tomatoes, carrot, turnip, and potato with the sautéed
vegetables. Then place the lid on your pan and cook this through for another
15 minutes, stirring occasionally. |

Adding Chicken Broth |
Fifth Step: Adding Chicken Broth
Once the vegetables have cooked through add the chicken broth.

Adding Marjoram, Salt, Scallion

Sixth Step: Adding The Spices
Now add these ingredients:
1 Teaspoon Marjoram Leaves (dried)
1 Teaspoon Thyme (dried)
1 Teaspoon Salt
3 Chopped Scallion Onions

Adding Green Beans, Zucchini, and Squash |
Seventh Step: Adding More Vegetables
Cut your green beans into bite size chunks discarding the ends. Then
chop the zucchini and yellow squash. Once you have done this add these
vegetables to the soup. Cook these for 15 minutes with a lid on your
saucepan. |
